Cape Cod, Massachusetts
Barnstables are grown in cold, clean oceanic waters. The firm meats have a sweet, nut-like flavor and a uniquely crunchy texture.
Long Island, New York
These medium-sized oysters are mild, pleasantly salty and very meaty. Great beginner oysters, they won’t overwhelm you.
Cape Cod, Massachusetts
The Chatham’s rich, firm meat delivers a “slap you in the face” brininess, a sweet taste and a mild mineral finish.
Cape Cod, Massachusetts
Grown in the waters of Cotuit Bay, these oysters have been farmed in the same area by the Cotuit Oyster Company since 1857. Naturally tumbled by wave action when they are young, Cotuits grow strong shells before they are bottom-planted, yielding plump meats with
a clean, sweet, briny flavor.

Grown in some of the coldest water in Cape Cod Bay, these oysters never go into spawn, but they do fatten up as if they are going to, growing deep cups filled with fatty meat that has an extremely
buttery finish.

Grown in Duxbury Bay, the firm meats of these oysters offer up a wonderfully clean tasting butter and brine flavor with an unmistakable sweetness and a mossy finish.
Martha's Vineyard, Massachusetts
Considered a “boutique” oyster, growers prefer quality over quantity. The firm white meats are characterized by a briny hit followed by a smooth creaminess and a sweet finish.
Prince Edward Island, Canada
Very tender meat with a nice balance of brininess and sweetness. These crisp oysters taste a bit like lettuce. A little lemon and and a dab of horseradish are all these beauties need for perfection.
Martha's Vineyard, Massachusetts
Creamy meats with inconsistent brininess, the wild variety has a clean seaweed flavor, while the cultivated variety may be milder.
Chesapeake Bay, Maryland and Virginia
Creamy meats with a mild salinity and slightly sweet flavor.
Wellfleet, Massachusetts
These Cape Cod oysters grow sweet in cold, calm waters. Eat them straight out of the shell and do drink the juice, which adds a splash of salt. A squeeze of lemon can be nice, but these oysters are delicious enough to stand on their own.
Westerly, Rhode Island
Cultivated in the waters of Winnapaug Pond, a mere 100 yards from the open Atlantic Ocean from which it is protected by a natural barrier beach. This ocean proximity gives Watch Hill oysters their classic New England flavor, as the tides daily replenish the pond with the rich nutrients upon which these oysters grow deep cups, a high salinity, and a full-bodied flavor with a buttery sweet finish.

Cultivated in calm, protected beach waters WiAnnos are sustainably harvested by hand. They are incredibly clean and quick to grow plump and tasty.
